Jo, you were definitely right. I fixed the spaghetti zucchini with alfredo sauce, chicken and broccoli. It was a little higher in carbs than I normally eat but hubby said "you have outdone yourself tonight"
I fixed individual dishes so I could track my carbs easier. I used:
1 cup spaghetti zucchini 3 carbs
1/4 cup alfredo sauce 3 carbs
1/4 cup broccoli 1 carb
4 oz cooked chicken 0 carb
2 Tbl of shredded parmesan/romano cheese
1 Tbl of butter
sprinkle of onion powder and pepper
I sprayed a baking dish with cooking spray. I put the zucchini in first and put the cheese on top of it, then put in the chicken and broccoli, onion and pepper; then covered with the alfredo sauce and butter. I baked it for 30 minutes at 350 degrees.
We also had a small salad which I counted another 3 carbs. So, like I said, it was a little more than I like to eat for dinner but absolutely delish
Luckily I had a zero carb day until we ate this so I was still under 15 for the day.
After eating this it gave me an idea to use the alfredo sauce and broccoli with cheese to make a soup when it starts getting cool around here. I would still add the chicken, just leave off the zucchini.
