Lemon Fat Bombs

Sometimes it is difficult to get enough of the good fats in our diet, but fat bombs are a delicious way to do it.  These fat bombs are lemony and yummy.

Lemon Fat Bombs (makes 12)

2 oz. cream cheese, room temperature
4 tablespoons butter, room temperature
1/4 cup coconut oil
1/4 teaspoon lemon extract
2 tablespoons sour cream
1 tablespoon plus 1 teaspoon lemon juice
sweetener to taste

Use a fork to stir together the cream cheese, butter, oil and extract until well blended.  Stir in the sour cream and lemon juice.  Add sweetener to taste, stir until smooth.  Equally divide the mixture between 12 mini paper muffin cups or drop into 12 mounds on wax or parchment paper.  Refrigerate until firm.  Keep refrigerated.  Can also be frozen and eaten while frozen, if desired.

Oops, I forgot to include the most important ingredient, lemon juice, so I just went back and corrected the recipe.

Good thing I looked over this recipe once again.  When I originally typed it, I was looking in my cookbook, it is on the same page with frosting recipes, so I got some frosting ingredients mixed in.  At least I know that this time it is correct.   :o
