Jess, I find that a knife sharpener is essential in my kitchen, nothing worse than a dull knife!!  >:(
 Get good quality knives, and they will keep their edge longer..I process a LOT of game meat every year, (this year 7 deer, and 4 elk)  and that is hands down, the single most important thing in my kitchen. Other than my digital food scale..it is second to my knife sharpener! :)

Umpa, I live in a teeeny town called Saratoga, Wyoming.  pop: 1726 nearest Walmart is over 1 1/2 away in Laramie..in nice weather, and if the range road is open..whic it isn't in from October to June.

 nearest alco or pamida 45 minutes away, and Sam's club n Big Lots are over two hours away in Casper, Wy!! Where I am is rugged, beautiful, amazing, but kinda secluded, u take a step back in time about 20 years here. In winter, the roads and interstate get shut down when it's bad. we have two Radio stations. I help all my friends process their game meat, and if someone doesn't "tag out" or harvest their deer/elk/antelope, we pitch in what we have and make sure everyone has meat :)

I LOVE IT HERE! I can see bald eagles deer, antelope, bunnies, foxes, and an OCASSIONAL (thank God) mountain Lion right out my front door ;)

Ah geez, yep guess I'm a hillbilly y'all LOLOL
