But I'm just giving a quick update and a good recipe I found online. My husband and I had a GREAT trip to Niagara Falls and NYC. I surprised him with a vowel renewal at Niagara since we had NO good (actually literally ONE grainy shot gun wedding pic lol) wedding pics......but now we do!!!!!!!! And we are WAY skinnier than we were then 7 years ago! We are both pretty much staying at the same weight and have basically been too busy/lazy to tweak what needs tweaked to continue losing...but we are trying! First here's the recipe. It's REALLY good even though the ingredient combo seems...strange. It tasted like beef stroganoff to me LOL. It's as GOOD as the spicy italian sausage stew on the board that Doug likes...JUST as good and filling but different! SPICY SAUSAGE CASSEROLE
1 pound pork sausage
8 ounces cream cheese, softened
10 ounce can Ro-tel tomatoes, undrained (diced tomatoes with green chiles)
16 ounces frozen cauliflower, cooked and drained
Brown the sausage; drain the fat if necessary. Stir in the cream cheese until blended. Add the Ro-tel tomatoes. Slightly chop the cauliflower and mix with the sausage. Good served with a fried egg on top.
Makes 6-8 servings
