Chef Varrieur Goes On The Lamb!

In a recent restaurant review outing FAT TO SKINNY book series author and Chef  Doug Varrieur had the pleasure of being spoiled by well known Jerusalem Gardens Chef  Matt Aloisio.  Chef Varrieur requested Chef Aloisio prepare “chef’s choice” lamb dishes for his party of four, the only rule was that the dishes be low carb. While Chef Aloisio prepared the main course the group delighted in low carb Hummus with seasoned cucumber slices for dipping, Turkish beer, a very talented belly dancer and a wonderful ambiance. Asheville’s very own Jerusalem Garden Cafe located on Patton Ave across from the park features a delicious fresh Mediterranean cuisine sure to please anyone’s pallet. Chef Alosio has been the head chef at the eatery for over 10 years and it was evident why when the entrees arrived. Gracious and attentive servers brought slow cooked lamb shank (pictured below), roasted lamb, braised lamb and lamb chops all cooked to perfection and seasoned with a delightful proprietary blend of spices including cardamom, cumin and curry. The chef’s special blend includes a total of 16 mixed spices which marry together in a most balanced way starting off with a pungent entry and a smooth finish. Flanked on the plate was a mixture of fresh garden yellow and green squash, asparagus, spinach, onion and a drizzle of carrot. The smoky sweet flavors in the sauces added a wonderful savory texture to the dishes while accentuating the flavors of the lamb.
