This Sat is my 12 yr old bday party

and I have decided that I am goingt o make F2S chocolate cupcakes with chocolate frosting...

Wish me luck...  ???

Any suggestions on the frosting?

How about cream cheese frosting? ;)

12 oz Cream Cheese (0 carbs)
1 1/2 Sticks Butter
2 tsps Vanilla Extract
¼ cup Xylitol

Allow cream cheese and butter to soften to room temperature on kitchen counter.
Mix together with hand mixer on high speed until it’s light and fluffy.

This makes a nice carb-free frosting.
You can add other extracts or emulsions to give it a different flavor.
For example, I like to add 2 tsps coconut extract for coconut cupcakes!... YUMMY! ;D ;D ;D

BTW... Happy birthday to your 12 year old! :)

Tony and Marty are right.   I like both choices here  :) 

The homemade whipped cream is basically the same that I've been doing for my frozen treats.  Just unfrozen.  It seems to hold up pretty good in the fridge for several days.   ;)  http://www.fattoskinny.net/index.php?topic=3831.0

Believe it or not if you replace the cream cheese with regular Crisco and use powdered form of sugar you have a basic royal wedding cake frosting.  I haven't tried it yet with out the regular sugar but I don't know why it wouldn't work.  Just a thought  ::)

Yes Umpa that is pretty much it.   I don't know if you remember a while back we did my son's wedding cake.  I'm not at home right now but I will look and see what the recipe says.  I was thinking it would be perfect for those Oreo's Rena was talking about.  ;) 

Marty the coffee grinder works great. It does like to go everywhere though...lol

For the Oreo filling, you might try Crisco and powdered xylitol blended with a hand mixer.
An idea I got after reading one of Toosweet's posts. 8)

 You are right Tony.  

Umpa here is the recipe that I have for Royal Icing (wedding cake icing)

1 1/4 cups solid vegetable shortening (Crisco)
2 lb confectioners sugar
7-9 Tbs water
1 Tbs vanilla
pinch of salt (in the summer use 1/8 tsp)

I don't know why I was thinking it had butter in it..LOL  It's pretty much the same thing that you can buy already made in store in the big tubs where you buy the cake decorating supplies (Wilton's cake icing) I wouldn't think you would want to use as much xylitol though  :P  

When I first saw this recipe I thought yuck  :o  Crisco is for frying chicken...LOL  but it is really quite good.  It can be made way ahead of time and It is easy to make the flowers and such with.   I've had it on my list of things to try using the xylitol so I'm anxious to hear how this works for you  :)

Yes you are right Marty.   I'm sure it can be done and would taste pretty good.  The butter makes things slide around a bit to much though...LOL  As a matter of fact I had forgotten to add the salt in some of the mix and spent some time replacing the dots that kept sliding off...LOL   :o  The sugar also gives the frosting a stiffness so I'm not sure how the xylitol would do to replace it for a cake but with just needing to fill a cookie I think it will be great don't you think?   Yummm     I do plan to test it with the cake decorating though.   ;)  It's fun to play  ;D
