Great Low Carb Cheesecake Recipe

Great Low Carb Cheesecake Recipe



Ingredients

   1 cup sour cream
   3 large eggs
   12 drops FAT TO SKINNY ZERO Sweetener
   1 tablespoon vanilla extract
   16 ounces cream cheese
   Mixed berries and sugar free whipped topping to garnish
   

Directions

1- Preheat oven to 350 degrees.
2- Spray cheesecake pan with Pam. Beat cream cheese, ZERO sweetener and vanilla extract in your bowl until well blended.
4- Beat in eggs on low one at a time.
5- Gently fold in sour cream and pour into your cheesecake pan.
6- Cook for one hour until firm.
7- Turn off heat and leave in your oven for one hour. Cool to room temperature.
8- Refrigerate overnight.
9- Top with berries, dab sugar free whip cream if desired on individual slices as served.

I'm craving something sweet today but only have 8 oz of cream cheese. I think I'll try to make these in muffin tins with cupcake liners! I've been saving my crumbs from packages of gg crispbread, so I'll add a little whipped cream and sprinkle the crumbs on top. Yum! Thanks, Doug! :)

BTW, if you can get your hands on silicone cupcake pans, they work great!
I found if I spray them with a little PAM, everything I bake comes out so easy!

Hi Alicia - I usually make mine in cupcake  tray or mini muffin tray which I call 'babycakes'.  I put about 1/2 teaspoon almond meal/flour in the bottom and this works great as a base. I cook for approx 20 nins. As soon as they rise and crack  they are done.  If using paper liners (I usually double line) cool but don't leave in tin as papers go soggy.  Top with a little melted SF choc.  A little bite of cheesecake heaven. Carb count wise, my cupcake size work out to about 1.2 and the babycakes 0.5.

Aww, you guys are awesome. Thanks for all the tips! I sprinkled some of the gg crisp crumbs and unsweetened coconut in the bottom of the liners and they turned out super good! Satisfied my sweet tooth, for sure!

Nice to see you, too, Tony! All is well, just super busy with school, music and family (though not necessarily in that order). I'm still lurking from time to time! :)

FTSers - What are your thoughts on using silicone bakeware (as opposed to non-stick metal).  When they first came out, I was concerned about silicone leaching into the food, so I avoided them.  Perhaps that is a silly concern, but...  However, when I think about it, the non-stick coating they use on metal pans (Teflon, etc) can also flake and leach into the food so I am rethinking my ban on silicone.  As always, I can't wait to read your insightful responses.

Love them especially for microwave.Nothing sticks to them.I have 3 inch by 4 inch set I use to make the omm into french toast.I cook it in the microwave then put it in a hot pan to crisp!Yummers! ;)

I absolutely love my silicone bakeware!!  The ease of use is hands down so worth having a few in your arsenal of gadgets.   ;)  I get the concern you have had but as you say the non stick is probably worse in that instance.  In my research I haven't found much in the way of contamination of your food when using them.  It doesn't have the same issues of using plastics   ;)

I made this recently in 3 mini springform pans and it was wonderful! Each pan was 2 or 3 servings depending on my mood that day
