Hi Life777 and welcome to the forum! I had to keep trying until I got the mashed cauliflower to suit my taste. So glad I didn't give up on it because now it's one of my favorite side dishes. When I put the softened cauliflower in my food processor, I just add a little salt, pepper, mayo & a little cheese or real butter. You can also add garlic or top it with bacon bits too. Try to avoid the brown rice due to the carb count. I haven't yet tried the cauli rice, but I hear it is yummy! There's tons of great recipes here and in the cookbooks. Try lots of things until you find the things you like.
The sirloin slices with onions and peppers is great! Just don't eat too many onions since they have a few more carbs than the peppers. Good luck to you!!
