RANCH SALAD DRESSING

RANCH SALAD DRESSING

1 cup mayonnaise
1 cup coconut milk (make sure you get the 50 cal no sugar kind which only has 1 carb in 8 oz)
Seasonings:  dried parsley, salt, papper, garlic powder, onion powder,
A squirt of lemon juice

Just blend all of it together ~ I use a food processor.  I do not know the exact carb count (perhaps Umpa might know), however, it is going to be VERY LOW in carbs.  My family loves it  :)

Yummm sounds good....can I use almond milk instead or is the coconut thicker so its better?

Hi Ladyluck ~

I actually think the Almond Milk would be thicker than the Coconut Milk (which is found in the natural dairy section probably near your Almond Milk).  I used to make it with Milk then Buttermilk then Heavy Cream in an effort to lower the carb count.  I love the taste & texture of using the coconut milk plus really like that the 8 oz is only 1 carb soooooo if you make it with the Almond Milk let me know how it comes out  :)

Ken's Buttermilk Ranch only has 1 carb for 2 Tbl...my favorite.  Lot's less work for us easy peasy peps! LOL  :D :D

One carb you are correct Kim ;) What a cool recipe.I am always running out of ranch salad dressing.I have a dinner party friday will have to try this.I buy coconut milk in the can(which is wicked thick) so I always have it but I also like the one they sell in carton(same consistency as almond milk).

The Ken's & Marie's Blue Cheese are good go to dressings if I am desperate, however, I have gotten soooooo spoiled by homemade dressings plus they are just so easy to prepare that I hardly ever purchase pre-made dressings anymore.  Hope ya'll enjoy the dressing and I hope ya'll have a GREAT Thursday!   :)

Please share your dressing recipes.It is easier to control sugar when you make your own.Dressings are one of the things that mess people up  ;)

Hi Kim! :)

Ken & Marie's is very good.

Your so right about home made dressings.
There is no comparison with prepackaged especially if you use fresh herbs.

However in a pinch, I will use Ken & Marie's, or Hidden Valley Ranch (1 carb per TBSP), or Newman's Vinaigrette.
Sometimes I'll just mix up some whole mayo and balsamic vinegar and make a creamy dressing for Greek style salads.

A recent discovery was mayo mixed with SF Raspberry vinaigrette for cole slaw.
It's a new favorite of my wife's! ;)

I've been "closing in" for quite some time now.
My current weight hasn't changed in many weeks.
But, my measurements are continuing to shrink.

I expect to get on the scale one day and... BOOM!... Goal reached! ;D

Yum to the raspberry!   I love creamy dressings.  You can add blue cheese to the ranch base for blue cheese dressing.  I haven't really lost anything yet because I am not keping my carbs low enough.  Its too hard right now but I am gearing up though! I already feel better  :)
