Jo's Mistake Almond Bread or Crackers
« on: March 25, 2011, 11:01:49 AM »
I made this bread by accident because I can not cook . I was trying to make some drop biscuits and put to much HC so then I kept trying to add almond flour but it was still runny so it turned into a delish bread maybe to good actually to me since bread was my real addiction . My stove is not level so I ended up with crackers  on the 2 end pieces ,which were pretty good with my chicken salad yesterday . Let me know if you like it !!!!

2 eggs                                      1 carb
2 TBSP Heavy cream                    1 carb
2 TBSP very ,very soft butter
1/2 cup Now Almond Flour            2 carb (If you use a different Almond flour do you carb difference )
1/4 Teaspoon Baking Powder        .5 carb
Dash of salt

Spray pan or foil on baking sheet 13x9 size Preheat oven 400

Wisk eggs ,butter & cream then mix salt ,flour & Baking Powder . Spread over whole pan making sure it is even or you will get crackers and bread like my pic shows . Either one is good .
Bake for 8-10 minutes . Makes 8 pieces or 6 peices and crackers

Hi Jo! :)

I melted sharp cheddar, chipotle jack, and jalapeno jack cheeses on some of these crackers.
With sides of sour cream and homemade guacamole, I was in 7th heaven!... Or should I say, Nacho heaven!!! ;D ;D ;D

YUMMY!!  I added some pizza seasoning (0 carbs) to the "batter" and laid it out on a pizza pan.  Also had to add a little extra almond flour, more like 3/4 cup so need to add an extra carb in the count.  Baked it then turned it into a super delicious pizza.  Used a little ceasar dressing (0 carbs) for the sauce and loaded it up with some pepperoni and cheese and baked a few extra minutes.  So good!!
