I had made some meatballs today and was searching the forum to see what recipes were here.  I happened on this earlier post.  I made this Alfredo Sauce and OMG.  I am so excited to serve for dinner tonight.  Meatballs with Alfredo Sauce, small salad and cheesy cauliflower bake. Yummmm

Yep!... This one is a winner, Suz!!! :) :) :)

It's much cheaper (and tastier) than those jars in the store.
I make it often. Sometimes, I'll add some grated Romano cheese and a little basil too!... YUM! ;D

Where do I find the cheesy cauliflouer bake?  I have tried the Alfredo and was VERY good.

Hi Barb,

Use this recipe and replace the broccoli with cauliflower of mix em up :)

Cheesy Broccoli

1 cup broccoli florets and peeled cut stems if you wish
1/4 cup Alfredo sauce from a jar (several brands available buy lowest carb) or use my rich and creamy Alfredo sauce
1/4 cup shredded Cheddar cheese
salt and pepper to taste. (Taste first before adding salt)

Steamed version

1-Steam the Broccoli to your liking
2-Drain very well and pat dry, set aside
3-Using your saucepan over medium heat bring the Alfredo sauce and cheese up to heat whisking along the way till cheese is melted
4-Mix in the broccoli and serve

Baked version

1-Using your saucepan over medium heat bring the Alfredo sauce and cheese up to heat whisking along the way till cheese is melted
2-Mix in the broccoli and transfer to a small baking dish which has been well buttered
4-Bake for 30 minutes in a preheated 350 degree oven

NOTE- To make the baked version even more luscious sprinkle some more shredded Cheddar cheese on top of the dish half way through the baking process.

Sorry for not answering Barb...busy this weekend.  You can use Doug's version but I just made my cheesy cauliflower bake the simple minded way LOL.  I made Doug and Umpa's alfredo sauce to go with my meatballs, didn't think to use it on the cauliflower.

I just took some frozen cauliflower, thawed a few seconds in the microwave (about 2 cups frozen).   Put in a baking dish I had sprayed with cooking spray.  I topped it with some cheese (I had these Sargento sticks that needed to be used) and some Gordo's cheese that I ALWAYS have around.  I have linked the products.  The Sargento sticks are 0 carbs.  The Gordo's Cheese is 1 carb for 2 Tbl.  I cut up the 3 sticks into 1/2 inch chunks, threw them on top.  I microwaved the 2 Tbl of Gordo's for 10-15 seconds and poured that on top.  Baked until the cauli was hot and cheese melted.  Made 4 servings total 7 carbs.  Two servings are in hubs lunches this week.

Thanks Tony LOL...sneaking being the operative word.  My body is fighting me all the way.  Your goal is getting closer too I see.  I was looking at old posts the other day where you and Jo mentioned the Turtle Club...I am now an honorary member LOL

Thanks for the Caul Bake, I will try it today except I will use fresh caul as I need to use it up  :)
