Souper Spicy Soup -- for one!
« on: December 04, 2011, 12:02:23 AM »
I love soup, but don't make it nearly as much as I used to. I've been craving it lately, so I came up with this very simple recipe, if you could even call it that. I imagine you could put whatever you wanted into it. The carb count is about 1.2, depending on the size/amount of celery you use.

SOUPER SPICY SOUP FOR ONE

1 chicken tender
1 chicken bouillon cube
1 small celery stalk, chopped
Tabasco sauce
salt & pepper to taste
boiling water

Cook chicken in microwave for 2 minutes -- 1 minute on each side, and then chop well. Put chicken, bouillon cube, celery, Tabasco, and salt and pepper into a soup mug. Add boiling water and mix well.

I like mine REALLY spicy, so I add a lot of Tabasco. Rick saw how much I put in today and his mouth dropped open. HA! This is also good to eat with hot & spicy pork rinds. I miss that soup & crackers combo, so sometimes I'll drop a pork rind into the soup and scoop it out with some liquid. Only do one pork rind at a time though because they dissolve pretty quick. I suppose you could try this with Miracle Noodles, if you like those, but I don't. I also use the BIGGEST mug I have to make this. It's a quick and easy way to warm up on a chilly day!

Miracle Noodles also sells an "Orzo" that would go well in this recipe :)

I tried this for lunch today..... SO SO GOOD!!  Thanks again Rena  ;D ;D

The hot sauce was a genius idea!!  I did mine the lazy way though LOL    ;D   I used chicken broth, canned chicken breast (I had a single serve can) celery and hot sauce.  2 minutes in the micro and it was lunch time!!!   :D :D

I made ktary's crackers using half sunflower seeds and  half pumpkin seeds they are really good and very, very easy to make.  They would go great with soup! 8)

Had this for breakfast today. Its delicious. Reminds me of when I'd put hot sauce in campbells chicken noodle soup when I was a kid. Yumm!
