Those of us in the South love the Pimento Cheese I just recently discovered this product that is made in Pawleys Island SC. It is so good and low in carbs. Here is a recipe that I think would be the closest to what they make
You have to spice it up though to give it a kick!!
1 (8 ounce) package cream cheese, softened - (mine says 1 for 1 oz) so 8
2 cups shredded extra-sharp Cheddar cheese (use the large shred not fine) -0
1/3 cup mayonnaise -0
1 pinch garlic powder
1 (4 ounce) jar diced pimentos, drained -2
about 10 net carbs for the whole recipe
Directions
1. Beat the cream cheese at medium speed with an electric mixer until creamy; add Cheddar cheese and continue beating until light and fluffy. Beat in mayonnaise and garlic powder; stir in pimento. Cover and chill for at least 1 hour.
I would add some cayenne pepper and some jalapenos.... That would give it the kick it needs Also it says to beat the cheddar but I would just fold that in or maybe just beat a small portion in and then fold the remaining in. You want to have the cheese in whole shredded pieces not just a creamy mush. This would be real close to the one I really love to get at the store. I haven't tried to make it myself yet but will next time I run out. Hope everyone enjoys it!!
