Thanks umpa.  Hmmm just like jicama, never seen this yellow squash around.  Will keep an eye out for it though. Wonder if the recipe will work with zucchini.

I'm sure it will, Morgan! Zucchini cooks down and mashes just like the yellow squash! Let me know how it turns out!!!  ;D
