creative egg salad

Creative Egg Salad

Ingredients:
3 boiled eggs chopped   (1.6 g carbs)
¼ cup chopped onions   (3.5 g carbs)
½  cup chopped seedless cucumber  (0.9 g carbs)
4 T mayo (1.2 g carbs)
1 T mustard  (0 carbs)
salt, pepper, paprika to taste
TOTAL CARBS:  7.2 g carbs divided by 3 servings = 2.4 g carbs

Optional:
Bacon (chopped)
1 Roma tomato (chopped)
shredded lettuce
low carb pita, low carb tortilla, or large lettuce leaf

Mix together all of the ingredients. Add any of the optional ingredients as you put together your final product.

I added bacon and a little bit of chopped tomato and put mine into a low carb pita. So, for mine I had 2.4 g + 2 g (tomato) + 2 g (1/2 pita pocket) = 6.4 g carbs

I am finding "normal" recipes that look good and changing them to fit our FTS lifestyle!
