What is 'turtle candy' umpa.  You explained that the emulsion gets stronger as it cooks - is it the equivalent to our 'essence' like vanilla essence?  I know you said frosting can stay plain, but could I use tia maria in it instead of the da vinci syrup.  According to my little carb book it says it has no carbs?  ta

A sugar free chocolate bar with caramel and chocolate would work or omit it ;) You can always subsitute extracts,syrups or essence for emulsions it just takes more. You are gonna love this cake .Its moist and has alot of flavor. ;)
