cauliflower & bacon soup

Ever so easy - had a cauliflower sitting and looking at me and really didn't want caulk mash or steamed cauli or any other way I've made it.  Since its winter here (and freezing) what's better than comforting soup?

Fry some bacon and onion (in a little butter or oil).
Add approx 2 cups water with a chicken stock cube (or  2 cups chicken stock).
Cut cauli into florets (or chunks) and pop in.
Bring to boil then simmer till soft.
Vitamise to preferred texture.
Add a little cream and season to taste.

Sounds wonderful, Morgan! :) :) :)

Couldn't you skip the butter or oil when frying bacon, and use some the rendered bacon fat?
Now if your referring to Canadian Bacon (which is lean), adding some butter or oil makes sense.

Yes Tony I agree. I usually skip the butter/oil personally, but when writing recipes I usually include and let the cook decide for themselves  :)
