Looking for a simple yet delicious meal for tonight? Umpa and I went Snapper fishing yesterday and whipped up this delicious meal.
Double Cheese Low Carb Ravioli with Pan Fried Snapper and Pica
Ravioli ingredients
10 very thinly sliced peeled eggplant slices (we use a mandolin slicer) Slice eggplant lengthwise
1/2 cup Ricotta Cheese
1/4 cup Danish Goat Cheese
1/4 cup shredded cheddar
1 teaspoon Italian seasoning
2 tablespoons olive oil
Ravioli instructions
1- Mix the cheeses and Italian seasoning together in a bowl
2- Place a good dollop into the center of the eggplant slice and fold over each end towards the center.
3- Pan fry in olive oil over medium heat seam side down first till light brown then flip and cook till second side is light brown.
4- Serve plain, with sauce of choice or as we did with fresh Pica
Pica Ingredients
2 ripe Roma tomatoes rough chopped
1 tablespoon rough chopped cilantro
1 tablespoon rough chopped onion
1 tablespoon rough chopped Italian parsley
1-2 teaspoons lime juice
salt and pepper
Pica Instructions
Mix everything together and let rest 30 minutes
Snapper Instructions
1- Use live shrimp on a small hook without any weight to catch....
or
pick up a couple nice Snapper fillets or other thin white fish like Tilapia or Catfish from the store
2- Salt and pepper the fish and flash fry in hot olive oil over medium high heat till edges begin to curl, flip the fish and cook another 2-3 minutes then plate
