Oh my gosh..... ideas....ideas.....ideas..... it gets sooooo hot here in Redlands (southern California) during the summer, triple digits, and with my daily hot flashes I'm going to have make a lot of cold treats and freeze. Just need to keep Mary's (13 yr old daughter) grabby fingers out, LOL.

Yep...making these tonight.  I can't believe I had forgotten about chocolate mint!   I'm so addicted to Popsicles these days and tired of spending my carbs on those store bought versions.   :-\

Just seltzer water with flavored syrups like mango pineapple are good! The possibilities are endless ;)

If you're in the mood, I found adding a few drops of FTS Zero will make nice sweet drinks.

Do you find that the seltzer water freezes hard Umpa?  I've been trying to find a recipe for popsicles that are close to the store bought ones like Cherry and Grape that don't freeze hard like a ice cube and don't have cream in them.  I have heard that vegetable glycerin helps to keep them from freezing hard but I also know that is used as a sweetener.  I can't find any nutritional information on it though.  Does anyone have any idea how many carbs are in it?

Xanthan gum I have used to keep my ice creams creamy but not vegetable glycerin TooSweet. :)

Basically, vegetable glycerin is a carbohydrate derived from plant oils.

Vegetable glycerin has more carbs than table sugar (about 5g per tsp).
This is probably because vegetable glycerin is a more concentrated form of sugar.
But not as "high-octane" as high-fructose corn syrup.
