Quick (Straw)berry Jam

Just thawed (microwaved) some strawberries and wanted to thicken it up to make sort of a jam.  So just mashed it up a bit and added some glucomannan powder and 2 drops of zero and voila I had strawberry jam.  Was going to put a little squeeze of lemon juice in too, but all out.  Was good.

Hey Morgan...just found this thread and was going to add to your recipe a little :) if you mash it up and sweeten it and then add 1 Tablespoon of chia seeds :) they will gel up and help it thicken and add that extra yummy omega 3s!!! :D

What a great way to use chia seeds! I'm trying to work them into my diet. I bet they thicken up the jam nicely.

in this recipe I believe she microwaved them. i like to make my jam in a saucepan that way I can add a thickener.I put jam on toast,crackers

Pup hit the keyboard! I even put jam on my eggs sometimes ;) I love fresh eggs and this time of year we can buy them from our neighbor Mr Sutton.

I put the jam on the omm, low carb bread and on almond muffins. Just had a passing thought of how it would taste on a low carb tortilla with cream cheese all rolled up...hmmm.

I've tried that... And it's GOOD!!! :) :) :)
I even added some almonds and broke them into chunks.

Works great with peanuts, too!
The added crunch was cool! 8)
