Savory Muffin Omelet To Go

Savory Muffin Omelet to Go

5 eggs
2 tablespoons heavy whipping cream
1/2 teaspoon cream of tarter
1/2 teaspoon baking powder
2 tablespoons McCormick Salt-free seasoning blend (or create your own)
1/2 cup mushrooms
6 teaspoons chopped scallions or green onions
6 tablespoons Cheddar Cheese (or your favorite) grated
1 one ounce slice of natural Swiss cheese cut into 6 equal squares

Preheat oven to 350 degrees.

Heavily butter six muffin cups.

In a bowl whisk eggs very well, then whisk in heavy whipping cream, seasoning blend, baking powder and cream of tarter and set aside to rest. (Salt and pepper if desired).

Divide the mushrooms evenly between the six muffin cups.
Place one teaspoon of scallions or green onions in each muffin cup.
Place one tablespoon of the grated cheese into each muffin cup.
Whisk the egg mixture once again and divide evenly between the six muffin cups filling near to the top. Swirl the mixture lightly with a fork to mix with the egg mixture.
Float one square of the sliced Swiss cheese on the top of each filled muffin cup.

Bake at 350 degrees for 20 to 25 minutes until done. The omelet will rise like a muffin/popover, and form a crispy crust around the edges and bottom, the Swiss cheese will melt and create a 'glaze' on the top. These will be dense and will not go flat when cooled.

That is a great idea. Do they refrigerate and re-heat well or are they only good right after you make them? I wonder if they would be good with tofu in them? You could substitute the mushrooms and scallions for about any of your favorite omelet toppings.

Yes they reheat .I like spinach and feta or spinach and mozzarella.I make a dozen at a time in a regular size muffin pan.If we are going on a car trip I like to make the mini muffin size for snacks. ;)

This sounds like a great recipe.  I like the spinach and feta.  So, instead of the heavy whipping cream, how about coconut milk (lite)...  I just can't have the heavy whipping cream.  Although, I should read the coconut cream (lite) can and rethink.  What can you use instead of the HWC?  Thanks everyone.

If I did not have heavy whipping cream, I'd use unsweetened regular almond milk or if it's not a dairy problem- low carb mayonnaise or whipped cream cheese.

umpa, are you saying that there is an almond/coconut milk blend out there?  Or, were you saying that you use either almond or coconut milk?  I tried this receipt out this weekend and brought the results to work for breakfast.  I actually added spaghetti squash to the egg mixture.  also used lite coconut milk.  Fantastic breakfast idea.  Thanks!

I'll have to try to Almond Breeze Coconut Milk Blend.  It 'does' sound good!  Thanks everyone.  You all have made living on FTS so much easier.  Initially, I had no bread to eat with my eggs but now I have the one minute muffin which I cut down into four pieces and then toast and then I also have the egg concoction ----- also, the other day I made the pizza crust with almond flour and it turned out beautifully.  Thank you, thank you, thank you everyone, especially Doug and his beautiful umpa!  You have a difference in what I eat.  Such an impact on my life!
