Flat Bread Biscuits

2 cups soy flour (Do not substitute)
4 teaspoons baking powder
1 teaspoon baking soda
¾ teaspoon salt
3 tablespoons butter (cut into dice size pieces)
3 tablespoons shortening
1 ½ cups heavy whipping cream (ice cold)
Makes 32 biscuits 1 net carb each
Directions
1. Preheat oven to 450 degrees.
2. Grease large cookie sheet.
3. In a stand mixer bowl combine flour, baking powder, baking soda and salt.
4. Add shortening and butter. Cut in with fingertips until it clumps.
5. Make well in center and pour in heavy whipping cream.
6. Attach dough hook to mixer and mix until dough makes a ball.
7. Take out and put on a lightly floured board.
8. Break dough into 4 pieces.
9. Take one piece at a time and flatten into a 6x6 inch square. Then with a rolling pin roll the square out even. With a two inch cookie cutter/cup cut out biscuits and place on pre greased cookie sheet sides touching. Repeat until all dough is used.
10. Bake at 450 for 13-15 minutes or until golden brown.
11. Remove immediately from pan.
