I make my french fries (or doug does
) out of eggplant.He coats home fry size eggplants pieces in egg and porkrinds and chunks them in the deep fryer or a cast iron skillet and fry until crispy! Then catsup to dip and yummers!!!Tomatoes and eggpland go together like peanut butter and jelly.He also does onion rings the same way but it coats the onions first with konjac flour.(a little goes a long way like a teaspoon for a whole onion.) Roasted Kale in the oven is wonderful,I am making some for grandsons visit today so when I pull the recipe I will post it.Zuchinni chips are good too here is a recipe just subsitute ground pork rinds bread crumbs.
