Deviled Egg Recipes... Please post yours here!

I LOVE Deviled Eggs.... ::) Over the years at parties I've noticed everyone has a different fav recipe for their chicken fruits. These tasty snacks are low..low...low carb and packed with protein. I've started this thread to see how many recipes we can compile. Here's a recipe I made yesterday.. They are delicious  ;D

Wasabi Devils

6 hard boiled eggs cut in half
2-3 tablespoons Duke Mayo (add more as needed)
2 tablespoons fine chopped celery
2 tablespoons fine chopped green olives
1 1/2 tablespoons Wasabi Paste
Black Pepper

1- In a bowl mash the egg yokes with all the ingredients except the wasabi paste and the black pepper. Mix well
2- Add 1 tablespoon of Wasabi paste, mix well and taste for heat. If you want more heat add some more. I like heat.
3- Fill the egg cavities and sprinkle the tops with black pepper. No salt is required as the olives are salty

Who says Devils need to include yolks! Here's another fav recipe of mine :)

Cajun Crabmeat Devils



6 hard boiled eggs cut in half (discard the yolks)
1 six ounce tin of crab meat
2-3 tablespoons Duke Mayo (add more as needed)
2 tablespoons fine chopped celery
2 tablespoons fine chopped green onion
24 capers
Fresh Parsley
Cajun seasoning

1- In a bowl mix the chopped onion, celery, crabmeat and mayo.
2- Fill the egg cavities and top each egg with 2 capers and a sprig of fresh parsley
3- generously sprinkle the tops with your fav cajun seasoning

Sounds good, Doug! :) :) :)

I think I would keep the yolks in the recipe (and add a bit more mayo for moisture).

Egg yolks are LOADED with good nutrients. Plus, they add richness and texture.
They do add a little carb. But as long as one doesn't overdo it, they're OK. ;)

I love my yolk too. I would not discard. This recipe Cajun Crabmeat sound delish, I night keep out capers, I don't care for them.
