None of us eats enough cabbage! Here's the Mayo Clinic lowdown on Cabbage  :o Low in carbs and delicious!

This heavy dense green or purple veggie is delicious, crunchy, low in carbs, filling and packed with phyto-nutrients. What are phyto-nutrients? Phyto-chemicals like thiocyanates, indole-3-carbinol, lutein, zea-xanthin, sulforaphane, and isothiocyanates are powerful antioxidants and known to help protect against breast, colon, and prostate cancers and help reduce LDL or "bad cholesterol" levels in the blood. Fresh cabbage is also an excellent source of natural antioxidant, vitamin C. Provides 36.6 mg or about 61% of RDA, more than that of in the oranges. Regular consumption of foods rich in vitamin C helps the body develop resistance against infectious agents and scavenge harmful, pro-inflammatory free radicals.

Having this Tonight.
Doug, You are right. I also make my own fermentation pickles (sour type) and sauerkraut. These foods are loaded with natural anti oxidants and can help ward of flu, type diseases. In the Middle ages, in Europe, many France residents, were dying because of the flu epidemic. But not so bad in Germany, And Poland. The reason was fermentation of the harvest.
It is just good for ya  ;) ;)

Everything from coleslaw to mock lasagna noodles, cabbage is another FTS staple!

Yessiree!!! ;D ;D ;D

I find it so interesting that when its boiled, it puts off an unattractive aroma.
But when you put it in your mouth, it tastes soooo gooood!... YUM! :) :) :) :)
