DINNER DISAPPOINTMENT

Here I sit at my computer, very disappointed, I am sad to say.
I am still clearing out my cupboards and fridge of "not so great" choices.  Not necessarily high in carbs, but higher than I'd like.
I was pressed for time tonight, so grabbed a bbq chicken on the way home.  Didn't feel like salad, so thought I'd throw something together and put it in the oven.  Creativity took over.
Grabbed some fresh vegetables out of the fridge and off I went.
Wasn't really paying attention to the carbs, just writing them down as I went.
Threw all the vegies together in a pan, and sauteed to soften. Then, mmmmm what shall I use for a sauce?
Ok, so threw in some cream, some leftover alfredo sauce and some chicken stock powder mixed with water.  Grated some cheese (leftover mozz/cheddar mix) and baked it in the oven for 30 minutes.
It was really good, but a little watery.  Problem is, once I totalled the carbs, it came in at 26.6 carbs for the whole dish.  Divided by 4 isn't too bad, even divided by 3 isn't too bad.  However, it pushed me over the limited for the day by 1, because I ate 1/3!
I tried really hard to have a healthy dinner, with lots of vegies (mostly 1 cup each), but next time will omit the Alfredo, because this particular one was 7g carbs!  I would also omit the water and just put the dry stock powder in.  I was so good all day and now I'm feeling like a naughty child.  I tried! Really I did!

Walden farms makes a carbfree BBQ & Alfredo sauce, i bought both today......also a carbfree marinara sauce that i use for pizza:) my wife has requested spaghetti squash Alfredo:) for this weekend... i made it for her a few weeks ago and she loved it(me too) Linda there are plenty of "comfort" foods that you can use on FTS....but you have to be prepared:)>>>> JUST DO IT!!!!!!!

Love walden farms...found all those at my local Kroger and they are awesome.  Don't feel too bad tomorrow is another day. It's all a learning process and after a while you'll just know how much you can eat and how many carbs like second nature.

Thanks Izzet, I really didn't think it was going to be bad at all, I appreciate your comforting words.

Gary, I wasn't looking for comfort foods (although it is that TOM), yeah I know too much info for you, it was a learning experience I guess.  It was really good, I just need to tweak it so its less total carbs.

You'll get better at this as it goes along. Did you subtract the fiber from the alfredo sauce?

Hi Doug, yes I did.  It was 8 to start with...... I thought I was doing so well and throwing all this healthy stuff in it......grrrrrrrrrrrrrrrrrrrrrrrrrrrrrrr

Next challenge - husband wants to take his daughter out for her birthday tomorrow.....hope there's salad!!!!!!

salad??? have a steak girlfriend! When I eat out I like staek, caesar salad, and french onion soup!
