I've tried the cheese as a taco crust.  turned out pretty good.  Non stick pan is definitly the way to go, with the oil...If anyone needs help while eating a lot of cheese try having about 11 raw almonds ( 1/2 oz) near bedtime.  It is great for contipation, tastes good and keeps you from feeling hungry when you go to bed.

I buy a bag of 'Raw' Almonds from Trader Joes. It's just plain almonds... not roasted, salted, dipped in chocolate, etc.,

OMG Gary you are a genius.
I was not hungry for supper, neither was hubby (he's been on nightshift this week) and was looking for something for "supper" around 7pm
So, I got into the kitchen, grated some old cheddar (didn't have any provolone), added some grated parmesan, sliced up some hot salami and a mushroom and put the skillet on and off I went.
Ok, the salami was a little oily, had to drain it a couple of times, but OMG was this ever good.
When it was browning as per Gary's recipe, I put 2 tbsp of low sugar salsa on it too and it was better than our usual Friday night pizza.  I couldn't eat it all, asked my hubby if he was interested in trying it.....he polished off the rest!
This will be a staple for sure!
Gary, start writing your cookbook while you're out of work!
