Creamy Coleslaw

CREAMY COLESLAW

1/3 cup xylitol
½ tsp salt, ¼ tsp pepper (I use 1 tsp Morton’s Natures Seasons)
¼ cup vegetable oil
½ cup mayo
2 T. white vinegar

1(10 oz) bag Fresh Express Angel Hair Coleslaw   5g carbs – 2g fiber = 3g

Mix all (except the coleslaw)  in blender.  Recipe calls for 20 min. in a blender, but my blender will burn-up before then –  blend as long as you can to make it super extra creamy.  Add whatever veggies you like in your coleslaw.  Pour over cabbage, mix, cover and refrigerate.  I let it sit for 24 hrs before eating - turn container over every few hours so it coats the slaw well.

Servings – three 2-cup – 3g carb
                  Six 1-cup    -  1 ½ g

Carb count does not include any veggies you may have added.
