Pork Rind Encrusted Catfish - FTS Conversion needed

Hi Umpa!

I found the recipe below online and thought it would be good EXCEPT for the milk and "fish breading".
It should work for any white-flesh fish as well as chicken.

Could you come up with and FTS version for me please?

Pork Rind Encrusted Catfish

Ingredients:

•1 lb. Catfish fillet
•2 eggs
•½ cup milk
•½ cup ground or chopped pork rinds
•½ cup any fish breading
Vegetable oil for frying

Directions:

Mix eggs and milk together.
In a separate bowl, combine pork rinds and fish breading.
Dip pieces of fish in milk/egg mixture and then coat with the breading mixture. Deep fry until golden brown.

Hi Mouseissue! Here ya go!
•1 lb. Catfish fillet
•2 eggs
•½ cup milk---1/2 cup almond milk or 1/4 cupheavy whipping cream(whipping cream is thicker so you would use less)
•½ cup ground or chopped pork rinds---( if you like spicy use spicy pork rinds)
•½ cup any fish breading----add 1/4 cup of soy flour or if you like cornmeal use 1/4 cup dixie diner corn muffin mix
Vegetable oil for frying
In the book there is a fish bread coating that we use that is very good, so is thiss!

Remember mouseissue,onion rings can use the same batter.Just dip them dry,wet dry.(Which means flour,eggmixture,flour)I love onion rings with catfish!i like deep fried eggplant cut up in sticks dipped the same way and deep fried too. ;)
