Can you replace the eggs with egg whites?
I would think it would be OK to use the egg whites, the eggs job in the recipe is a binding agent and rising agent for the other ingredients so I would say yes.
Im thinking of using my cupcake recipe to make pumpkin muffins. Would I just need to add some pumpkin Doug?
Now, about those cup cakes with pumpkin....lets look at your recipe; I would say why not
I would omit the chocolate, the chocolate syrup and I would omit the iceing....instead crumble some chopped walnuts on top of the muffins prior to baking. I would also use the same spices I used in the pie. 1 1/2 cup of canned pure pumpkin should do the trick. Let us know how they turn out.
Beebs recipe
Cupcakes:
4 eggs
2 squares unsweetened bakers chocolate
1 1/2 c almond flour
1/4 tsp salt
1/2 tsp baking powder
1/2 tsp cream of tartar
5 tblsp xylitol
1/4 c oil
1/4 cup heavy cream
torani sugar free chocolate syrup
beat eggs and xylitol together, while melting chocolate square
add rest of ingredients put in sprayed lined muffing pan bake @ 350 for about 24 minutes
Chocolate raspberry icing:
4oz. cream cheese
3/4 c heavy cream
5 tsp xylitol
spoonful walden farm marshmallow dip
torani sugar chocolate and raspberry syrup to taste
mix top cooled muffins and yum!
