Tuna Patties

2 small cans of tuna in water
2 large eggs
shredded cheese
Parmesan cheese
salt & pepper
 
   Just fry in canola or olive oil until brown & enjoy !

I think I calculated these carb totals correctly.  But here is my submission for the vegetarian recipe contest.

Pecan Meatballs with Sweet and Sour Sauce.

1/2 cup grated Parmesan cheese = 1.6 carbs
1/2 cup ground pecans = 14.0 carbs
1 cup ground pork rinds = 0
1/4 cup minced onion = 2.95 carbs
1 egg = .6 carbs

Mix all ingredients and make into small meatballs (approx. 25).  Brown in skillet with a little oil or non stick spray.  Remove meatballs from skillet and set aside while you make sauce.

In same skillet you fried the meatballs, mix together
1 cup frozen pineapple juice concentrate (diluted 3 parts water) = 12.77 carbs
1/2 cup water = 0
3 T cider vinegar = 2.7 carbs
1 T soy sauce = 2.0 carbs
Xylitol or stevia to taste for desired sweetness
Scant  1/4-1/2 t xantham gum to thicken = 0

Once sauce has thickened, add meatballs to sauce and simmer until heated through.

Serves 4 = 9.15 carbs per serving

You can add steamed green peppers, water chestnuts, bamboo shoots, celery, bok choy, broccoli, whatever vegetables if you would prefer a one dish meal.

okay friedpie this is wicked cool, I gotta cook this one.Can you use sugar free teriaki instead of pineapple juice?Since you are using vineager for the sweet and sour thing.It would reduce the carbs by 9. :)

Aren't pork rinds the skin of pork, fried in lard (pork fat).  I don't think a vegetarian would eat this.  It also seems like a lot of carbs for just part of one meal.  You would still have to add your veggies etc.  For those trying to stay between 10 - 15 carbs per day, it would be all used up just for this.

I agree Shihtzumom1 altough it does sound good I think that  Umpa & doug has to remake that with less carbs .

You are correct  but the pork rinds are not required,neither is the pineapple juice.The pork rinds can be replaced by the Now unblanched almond flour(its only 4 carbs a cup) .It has a similar consistency as pork rind flour.What is cool to me is using the nuts to make meatballs.But you are correct Shihtzmom.
I started this contest for our people on the forum that are vegetarian and can't eat soy because they are breast cancer survivors.So I have total faith that you will all throw your ideas up here and see what sticks.Some vegetarians eat eggs and fish.I appreciate you all helping me contest, so post away!! :)

Yes Jo I moved your recipe .I made them yesterday and they are wonderful.Doug posted a picture with your original recipe.They were very filling ..They kept me full all day! :)

I seen dougs pic i have to make some now havnt in awhile I put flax meal in my meatloaf the other day to replace breadcrumbs could not even tell the difference

Well crap!  The original recipie called for cracker crumbs and cornflakes, so I changed that to porkrinds.  That will not work for vegetarian.  But the meatballs are the bomb.

It would be way great with Umpa's suggestion to change the pork rinds to almond flour and would really reduce the carbs if you changed to the SF Teriyaki sauce instead of the pineapple juice like she said.  Sounds like a great recipe.

This is my official entry.
Cheesy Turnip Casserole.
one pound of turnips (4c) (20 carbs)
1/2 cup melted butter(mix together)
Mix 1/4c onions (2.5carbs)
1pt sour cream
1 can cream of mushroom  soup( make your own)
6oz. grated cheese (0 carbs)
1 tsp salt
1 tsp pepper
Mix with turnips and put in greased casserole dish
mix together with 2c crushed pork rinds(optional)
1/4c melted butter
sprinkle pork rind/butter mix over turnips
bake @350 45-60 minutes!
30.5 carbs total makes 12, 2.5 carb servings!
