Here is my entry for the contest. The original called for canned pork & beans, chili sauce, molasses & brown sugar.
EASY BAKED BEANS
2 cans black soy beans, drained (approx. 3 1/2 cups = 7 net carbs)
1/4 cup salsa (mine was 3 net carbs per 1/4 cup)
1/4 cup pasta sauce (mine was 4 per 1/2 cup = 2 net carbs)
2-3 tblsp. SF maple syrup = 0
2-3 tblsp. SF honey = 0
1/2 small onion sliced (approx. 1/4 cup = 2.5 net carbs)
Spray casserole dish with Pam. Add all ingredients except the onion and stir well. Lay the sliced onion over top. Bake in a 350° oven for 2 1/2 - 3 hours. The onion should be well cooked and most of the juice should be cooked off, but not dry. I have only made this once so I have not perfected the cooking time. Makes approx. 4 cups. My net carbs came to 14.5 so that would be 3.625 per 1/2 cup serving. (You could probably find salsa & pasta sauce with fewer net carbs).
**Note: For those who are not vegetarians, you may want to cut 1 or 2 slices of bacon in 1 inches pieces and lay over the onion before baking. The bacon should look cooked when your baked beans are done.
