Thanks again Umpa, I will sure be making this one soon.

Mouseissue we are in Ohio and temps dipping in the 50's at night now and in the high 60's and 70's this week...with rain rain and more rain... always rain.... Lord knows I sure wish I could send some of this rain to our friends in Texas. Most likely it will warm up again, you never know around here, as on Saturday Sept. 3 we broke a record it got to 100 degrees here... crazy.
Just noticed last few days getting dark before 8:30 now.  Love fall, but not winter, how I wish we could head way south for Winter, but hubby cannot retire for several more years. I find that weather can affect my eating, so have to be careful with winter coming and be sure have the FTS comfort foods ready to make.

I know what you mean about Winter and rain, rain, and more rain... Ugggghhh! :(
The last couple of weeks, our lows have dipped to the mid 40's.
But the daytime highs have been in the 80's sometimes near 90. Kind of strange, to say the least. :-\

We live about 65 miles south of Seattle.
It seems to rain 10 out of 12 months a year... The gray, wet, and cold, can be depressing sometimes.
Oh, to be a snowbird.

Of late, Texas is in my prayers for rain and relief from the fires.
What you do today is what matters!

It is awesome Umpa how you can come up with those great recipes, you must be some cook!  I never was much of a cook, so I got lots to learn. My mom was an awesome southern cook, she loved to stay in the kitchen all day cooking, it was how she showed 'love' to everyone.  I love to clean and I guess I always was too busy for cooking, and looked at it as something that made me fat and dirtied up my kitchen haha

I think I am more of a mad scientist than a great cook :D :D :D I think i am just stubborn and refuse to give up foods I love.My husband is an amazing chef! I come from a  large southern family like you and food was love! Problem is that love made me huge! Its not the diabetes that is inherited its recipes.Recipes that make you feel warm,fuzzy and loved :) Just convert the foods and feel the love!

 I had it before we went on vacation I split the recipe in half and it is very thin and crunchy . I made some chicken noodle soup too with the tofu noodles .

I LOVE this recipe Jo!!  I have made it several times.  Depending on how "sweet" I want it it reminds me of a thick pancake as well.  I used this recipe to make dressing on Thanksgiving Day.  I only used half of the cornbread after it was baked.  For me it satisfied my need to eat dressing with Thanksgiving dinner.  Thanks again,

I am glad you like we love it I made the dressing with it too I didnt miss anything yesterday everybody was laid out on the floor or nodding off me & tyler  were like what is wrong with these people LOL.
Suz next time you make the cornbread just for cornbread 1/2 the recipe it is very thin and crunchy and a little soft butter and mam oh man . I dont make it often because I like it too much . LOL

Oh my goodness!  I tried it tonight only used 1 egg though.  It was soooo good.  That is definitely a keeper!!!

I don't own an iron skillet (yet)... would you recommend using a stainless steel skillet on the stove top, or would it be better to bake in a cake pan or pyrex in the oven?

In the oven you just want get the crunchy bottom from the hot grease in the pan ,MMMMMM that is my favorite part . That is  why I half the recipe  so it will be thin and crunchy
