Hi snobles,

Spaghetti squash is usually used for a pasta replacement and is 1 net carb per ounce (a bit high).
It has a mild, nutty, squash flavor.
You can use it in any dish that calls for pasta. Or eat it plain with some butter, salt, & pepper.

I prefer Shirataki (yam) noodles since they have 0 net carbs and take on the flavor of whatever they are being served with. They come from the Konjac plant root and are also used to make glucomannan flour.

The cheapest I could find are here: http://www.asianfoodgrocer.com/category/shirataki-noodles

Hi. Thanks for the info. How on earth do you cook it? Do you cook it like regular yellow squash or what?

For Shirataki (yam) noodles...

What ever you do, be sure to rinse them thoroughly in a colander under warm water to remove faint smell they have from storage.
Or parboil them in salted water for about 30 seconds then drain.

Right out of the package, they have a rubbery texture.

If you want to eat them plain, boil them on medium heat for 2 or 3 minutes (depending on the texture you prefer), add butter, seasonings, mix, and eat.
Or add them to a recipe (or sauce) allowing them to boil for about that much time.

I stab a whole spaghetti squash a few times with a sharp knife(careful Beebs!) and put it in the microwave for 10 -20 mins, depending on the size.
When done, cut it in half, use a fork to get out the "spaghetti"
Allow the "spaghetti" to drain , then put it in a casserole dish with butter, salt & pepper and top with your favorite low carb cheese
Bake at 350 until the cheese melts
