Umpa I only have the regular Bobs Mill Almond Flour. How much will that change the carb count? I was also thinking there must be a way to make an icing that is low sugar but that we could add food coloring to or whatnot to decorate them like Christmas cookies and the like?

The Now almond flour is 4 carbs a cub and I think Bobs red mill is 8.So it will be 34 for the whole recipe. Which is still wicked low. :)

Hi, Umpa

Well the cookies look great and I well try to make  these my self and send to my husband overseas.
I just sent peanut butter one to him a lady bake for me there were not low carb, but I know he well
eat the low carb ones as well. The USO send them plenty of store bake goodies but not home bake
which there like. Thank for letting me share as always.

Jo meals and flours are the same.Soy won't work by itself on this recipe. You would have to cut it or it would be bitter. ;)

Travelus our thoughts and prayers are with your husband. Its always a pleasure to talk with you.He is gonna love these cookies they are crisp. ;D
Beebs i was afraid the icing would turn them to mush if you didn't eat them right away. They are crisp, which is hard to do.
Try it and report back. :)

I think I did something wrong cuz they were very crumbly and delicate so I made 1/2 the batter into cookie bars

Mine are crumbly until they cool completely, then overnight they get crisp! Did the kids like the flavor??
