Homemade Chocolates Peanut Butter Cups

Line a mini muffin pan with mini muffin liners.Melt 4 squares of unsweetened bakers chocolate ( *this is beebs idea*)in a double boiler.add 3/4 cup xylitol.mix well.add 1/2 cup heavy whipping cream. mix well.fill liners 1/3 full add 1/2 teaspoon peanut butter to each one.Then top with chocolate.add peanuts on top. Refridgerate 2 hours.

Hi dowensrdu! :)

I mix 1/2 Skippy crunchy peanut butter (5 net grams per ounce) with 1/2 Beanit Butter (0 net grams) to get a peanut butter "blend" that's only 2.5 net grams per ounce.

I've also used Almond Butter (2 net grams per ounce) with Beanit Butter to get a neat change of pace flavor and only 1 net gram per ounce.

I'd love to make these again, but am going to wait until I lose more weight. I'm afraid if I have them in the house I'll just want to eat them all.  ::)

yes jo freeze the balls first drop in chocolate and right back in the freezer on wax paper :)
