Garlic Parmesan Flax Seed Crackers
« on: November 10, 2010, 03:26:19 PM »
Ingredients:
•1 cup flax seed meal
•1/3 cup Parmesan cheese, grated
•1 and 1/2 teaspoon garlic powder
•1/2 teaspoon salt
•1/2 cup water
Preparation:
Heat oven to 400 F.

1) Mix all ingredients together.

2) Spoon onto sheet pan which is covered with a silicone mat or greased parchment paper.

3) Cover the mixture with a piece of parchment or waxed paper. Even out the mixture to about 1/8 inch. I find a straight edge, like a ruler, works well, though you can use a rolling pin or wine bottle too. The important thing is not to let it be too thin around the edges or that part will overcook before the center firms up. So after you spread it out, remove the paper and go around the edges with your finger and push the thin part inwards to even it up.

4) Bake until the center is no longer soft, about 15-18 minutes. If it starts to get more than a little brown around the edges, remove from oven. Let cool completely - it will continue to crisp up.

5) Break into pieces.

Sounds like a good cracker, readers be careful on your choice of Parmesan Cheese. Block Parm is always less salty the pre-grated packaged stuff like Kraft brand.

I made these crackers last night, and I really like them.  They were very yummy with spinach dip too!

so if you use pregrated cheese then maybe omit the extra salt?

The first time I made them I used garlic salt instead of garlic powder so I omited the 1/2 teaspoon of salt and they were not salty enough. When I made them the second time I did just what the recipe called for and they were just right .

Hi Renae! :)

It takes some time to turn flax seeds into a "flour" (actually a "meal") with a nice consistency.
This puts wear and tear on your processor's motor and uses electricity.
However, since Easter is tomorrow, grind away!

It's soooo cheap!... In the future, I would just buy it online.
In fact, I just ordered two, 2-pound packages at: http://www26.netrition.com/bobs_flax_meal_page.html
What you do today is what matters!

Publix carries the golden flaxseed meal in 1 lb bags for like 3.69.  Also, Sam's Warehouse now sells a HUGE bag of golden flaxseed meal for a little over $9.  I don't remember how many pounds it was.

If you have whole flax seeds it would be easier to grind them up in a coffee grinder that is what I use. Super easy.

Oh you found the cracker recipe MomOFone.  This is the one I was trying to tell you about.  A pizza cutter works great.  I do it before I bake the crackers and then I can just snap off the crackers when they are done.
