Pumpkin Ice Cream

Hey Umpa. Wanted to submit this in opne of the recipe contests but thought I would run it past you first to be sure im not missing any carbs

1 can (15oz) 100% pure pumpkin   4gr-whole can
1tsp. ground ginger
1/4 tsp. ground cinamon
1/4 tsp. ground cloves
1 qt. bryers carbsmart vanilla ice cream 4g 1/2 scoop
Heat pumpkin, ginger,cinamon and cloves in a medium sauce pan, sdtirring to blend flavors, about 5 min.
transfer to shallow pan, freeze to cool quickly.
soften ice cream (15-30 sec in micro)
Turn into a large bowl; stir in punpkin puree until nearly incorporated. Freeze until ready to serve.

Looks good to me! My favorite with vanilla carb smart is root beer floats! Yummy!

I would make individual servings.If you do the whole carton when you refreeze it the water in the pumpkin will turn to ice.Take 1 cup ice cream at a time and add the pumkin(cabout 3 tablespoons) and spices.Refreeze for 30 minutes and serve. ;)

Floats! That's the first thing I did when I realized I could eat carbsmart ice cream...hmmm maybe running to the store. lol

Becareful thedaltons6 my son is Type 1 Diabetic and for some reason when he chops the SF candie in his ice cream his sugar is high . when he just eats the ice cream he does not get high . That maybe just him I dont know .
   But it is good LOL ,we learned all these Low carb ice cream treats for him 4 years ago when he was first diagnosed . Before we all found DOUG, UMPA & FTS !!!!!!!

Nope Im type one and the sugar free candies make my sugar high as well. I limit my intake of that alot.... :-\

There' no doubt that certain sugar alcohols can raise blood sugar readings in type 1 diabetics. It's always a good idea to try different ones and check sugar levels shortly after. This way you can identify the safest ones for you.

Tyler did that today his sugar was 90 he ate 1 SF russel strovers candie 20 minuites later he was 150 . What is the reason that  the sugar alcohols would do that ? Would it also raise a type 2 diabetic and just a regular person ?

I'm glad to know this about sf candy - I did over-eat on it and gained pounds.  :o  It will be off my list from now on...  Thanks!
