I enjoyed the jicama fries (just cut into pieces and cook in canola or olive oil in a pan or deep fryer).  I also liked the hash browns (shredded jicama cooked in butter - I think this is in with the breakfast recipes as a side dish for eggs).  I am looking forward to tying the jicama "apples".  That sounds good.

I love Jicama!  I usually eat it fresh - like an apple, cut up in salads or like the Mexicans eat it, cut in spears with chili powder and lime sprinkled on it.  It's good in stir-fry as well.  This is a good time of year to buy Jicama - it's so fresh here (southwest USA) that sometimes when you start to cut it, it just bursts open!

You guys are so lucky. I can't find it anywhere. I even asked a produce guy and he looked at me like I was insane.

I found fresh turnips are a good potato substitute.

The trick is to leave them on the counter for a few days so the natural sugars develop (Doug's suggestion) and par boil the turnip chunks for a few minutes in water that has a TBSP or two of sweetener (I use xylitol).

Then drain, let cool a bit, and shake the chunks in a ziplock bag with some olive oil, sea salt, and other seasonings (like Italian).
You can experiment with other seasonings until you find the one(s) that flip your switch.  ;)
Then put them into a 375 degree oven until they start getting golden brown.
Be sure to turn them over a couple of times while they are browning to get them brown all over.

When you get past the mild cabbage aroma while boiling, they taste quite good.
What you do today is what matters!

Alex try cooking them like homefries or shred them for a salad ,hashbrowns or coleslaw.Try Chayote too. That goes in the microwave until soft . ;)
