pork rind "shake and bake
« on: November 17, 2010, 08:32:05 AM »
I have been so leary to try the pork rind coverings for chicken. I just cant stand it when i over cook chicken.
Anyways, I took a handful of prok rinds-1 tbsp soy flour and some kickin chicken spice and pur in processor,
I dipped ck breast in egg then dipped in mix and friend in EVOO. i watched it until it was just done and ......
WOW!! (i actually decided to try it after watching dougs ck parm video) very easy and it was SO DELICIOUS!
If you are skeptical you have to try it!!!!
THANKS DOUG!!!!

OH!  I'll have to try this with the kickin chicken spice!   That sounds SO good!!
I had the fried chicken again last night, but only added black pepper to the ground pork rinds.   I finally got the "fake" mashed potatoes right (thanks to owensmath)and they were good!  I put a little of the Heinz chicken gravy on top......felt like I was cheating!
