Pumpkin Pudding

I saw pumpkin custard but this is more like pudding and no egg. I hope you like it. I am completely addicted...at least until winter is over. lol



1 Pkg Cream Cheese or Neufchatel Cheese (lower fat)
1 15 oz can of Libby's pure pumpkin
30 drops FAT TO SKINNY Zero Sweetener
1 Tbls Pumpkin Pie spice
splash of heavy whipping cream

Soften cream cheese and beat/whip ingredients together until smooth and creamy.  I put it on the highest setting after it is all mixed.  Chill in the fridge until firm.  Spoon out like pudding and top with SF whipped cream and sprinkle a little pumpkin pie spice on top. You can also throw in some nuts in the pudding or on top for a variation.

Sounds yummy Izzet.  How is the new promotion going?  Haven't seen you on here so I figured they have kept you busy.

I have been running around like a crazy woman but loving it! I just haven't had much free time serving in two roles.  Hopefully, after this week, and I finish training my replacement I can heave a sigh and focus solely on my new position.  Thank you so much for asking...I miss you guys and having time to sit down and enjoy reading and responding to posts.  I hope you are doing well!
