snobles i also posted a recipe using cauliflower because alot of people are overseas and cant get jicama.Both are good!

I made enough jicama potato salad to take some to work and share the next day. I found that it becomes very watery after sitting. I had to stir it up and then still had to drain off a lot of liquid. I think it could be from the amazingly LONG time that the jicama had to be boiled.

I sauted my in a pan inabout 1/4 cup of water and had a tea kettle full of boiling hot water and as the jicama dryed up i added alittle more . (1/4 cup at a time)Try this.Did you get my reply about the xylitol?

Maybe I had too much water in the pan with my jicama then. Next time, I will lower the amount of water.

I finally found the jicama and tried it.  Easy enough to peel just cut off the sides and peel the rest.  I cut it up for fries and cooked in olive oil then sprinkled with old bay.  Not bad.  Raw was pretty good too as it tastes like an apple or pear and smells like pineapple.  I think I might try it raw with cinnamon and xylitol sprinkled on it. Someone else suggested using coconut oil which I will try with the part of my left over slices and see how I like that. Not exactly like french fries but close enough to fool my brain when looking at it. lol  I was a little concerned about the carbs since it said it was like 11 g of carbs for one cup even with 6 g of fiber that's still a lot for a side or snack (5 net carbs).

I love the smell of it though and glad that I tried it.  This will be a once in a while thing for me after I finish this off.

It is also good raw with a little bit of lime juice sprinkled on it and then a light dusting of chilli powder.

The cauliflower is wicked good! just cool it before you mix ;)
