Im curious, how long do you think you would have to bake a jicama before it was fully cooked? I have been thinking I could make 'baked potatoes' but I wasnt sure how much time it would take. Any suggestions?

Jicama is a low starch "Mexican potato" but always retains a crunch so it's not suitable for baked potatoes. Great for hash browns, home fries, even french fries. Try Chayote squash as a good replacement for a baked potato. It's not "potato" but it's a great veggi on the plate. Microwave the squash untill a tad soft and dress just like a baked potato with butter and sour cream.

I also like twice baked* potatoes*.I take cauliflower mash potatoes and put them in the bottom of a  baking dish.Cover them with green onions,cheddar, and chopped cooked bacon .Bake until it is melted and gooey! :o YUM! Just like I use to make my baked potatoe!

Ok so I cooked the cauliflower forgot to drain so a good portion ended up on the wall. I couldnt get it smooth more liked I hacked away at it with a butter knife but in the end it tasted pretty good anyway.

I just made jicama fries last night for my husband and I and he really like them so did I.

It looks like a potato but shaped like an onion. It's spelled jicama but pronounced hicama. I had trouble finding it as well.

Umpa, I was wanted to ask are there more ways to cook a jacama. I broil with butter and garlic.

  Pan fry it with onion and a little green pepper as home fries.One of the ladies here puts it in her crockpot with her roast.I also like it grated in coleslaw and in salads.i just made potatoe salad with it last night and it was awesome!!!!!i am gonna post the recipe for the potatoe salad in a hour when I get done with work.It will be under recipes.

Umpa, all we have at our walmart here in our little town, is just a regular walmart. It's got like dry goods as foods, but not pershable items! Oh well. They have a super walmart in the next town. May have to venture out and see! Thanks!!
