Carbs and Vegetables

A friend of mine told me that if you eat raw vegetables they contain less carbs than if you cook them.  I don't see how this is possible.  Does anyone know if this is true and if it is why this happens?

That is true for starchy (high carb) veggies like potatoes.

When you boil potatoes, some of the starch is released into the boiling water.
The starch causes that milky look to it.
However, not enough comes out to make the potato low carb.

I don't know of any starchy veggie that is OK to eat on F2S.
The starch is the primary source of the net carbs.
What you do today is what matters!
