I am VERY proud of you Alex!!!  :) :) :)

Over the holidays, I was at friend's house and was offered a "meat roll" that looked good F2S-wise.
But when I took that first bite, my taste buds knew after two chews that there was carb poison in it.

After that, I carefully found a way to get rid of it and continued to enjoy the good low carb foods I brought along.
My friend understood and apologized like a REAL friend would.

I would omit the bread and make this like a quiche. This is a large recipe!

9 slices - 1/2 cubed bread (de-crusted first)***Omit***
9 eggs - beaten with milk***1/4 cup unsweetened almond milk***
2 cups of milk*** omit***
3/4 tbls Coleman's mustard (dry)
2 lbs of sausage- fried and drained
1 lb of grated cheese for top layer
1 can of cream of mushroom soup mixed with 1/2 can of milk**** omit this and use  1/2 (entire recipe)alfredo sauce instead mixed with 1/2 cup mushrooms*
***Take a 9 x 13 pan put cooked sausage  on bottom ,sprinkle sausage with cheese(about half) cover with eggs(beaten) cover with remaining cheese.Bake at 350 until firm and set(about 35-45 minutes) Serve with warm alfredo  and mushrooms.as a sauce drizzled over top on each slice

This would be great recipe if you are cooking breakfast for company or a large family so you are not standing over the frying pan flipping eggs while everyone else is sitting and enjoying their morning coffee.

Hi Umpa,  :)

How much alfredo sauce does this replacement of the milk and soup call for?
Is that 1/2 cup?
1 1/2 cups?...

1/2 a cup mouseissue. You are correct schihtzumom.A quiche can cook while everyone is having coffee.I also like quiche for supper with a salad like Caprese.I put pepperoni in the quiche and when I serve it I drizzle a little olive oil on it.Yummy ;)

Umpa, could you use something like hamburger instead of sausage, as I have an allergy to pork and tofu?

My wife and I had this for the first time this morning.

We both felt skipping the alfredo sauce and mushrooms would be better (unless you wanted to saute the mushrooms first).
Raw mushrooms work nicely in most salads. But not so much in sauces (unless you like the "musky" raw mushroom flavor).

On our second (smaller) helping, we substituted them with 1 TBSP sour cream per serving.
It was mucho YUMMY!!!... Less work!!!... And lower in carbs!!! ;D ;D ;D

Thank you for this recipe!
We will be having this on a regular basis especially when we have company for a weekend brunch.

Mouseissue, did you use canned mushrooms or fresh? Using canned, you wouldn't need to saute them first.
