Mock Zucchini Souffle

1 tbsp butter
1/4 cup olive oil
1 large onion, chopped
1 tsp minced garlic
2 to 3 medium zucchini, grated
salt and pepper
6 eggs, separated
8 oz Gruyere cheese, grated
1/4 cup parsley, chopped
Butter four 1 1/2 cup ramekins or one 6-cup souffle dish. Heat oven to 325 degrees. Put oil is large skillet over medium heat, add onion and garlic. Cook until soft. Add zucchini,salt and pepper cook until tender. Drain excess liquid and cool. In large bowl, beat egg yolks and cheese. Add vegetables and parsley. In a dry bowl, beat egg whites until they hold a soft peak. Stir in about a third of the whites in the yolk mixture. Gently fold in the remaining white, trying not to deflate them. Pour in dish, bake until golden 30 to35 minutes. Serve immediately. The cheese is a little strong and expensive. May want to substitute.
