Felt like a hero!

I introduced "Cauliflower Mashed Potatoes" to my family for dinner last night (with a delicious steak and some broccoli...(I passed on the broccoli). 
I Just steamed the cauliflower, added some garlic and butter and mashed it up!  The kids devoured it! 

I felt like a hero because they loved this new invention and it was sugar free!

What a great start! Your family is going to be so much healthier! Curious, though, why you passed on the broccoli? Personal preference?

I keep meaning to try the cauliflower mash. Does it really taste like mashed potatoes?

SherriPie, just follow the directions on page 167 of Doug's book.  I love it!  Some people add shredded cheddar cheese.  It looks like mashed potatoes on your plate and tastes very similar.  Doesn't really taste like cauliflower.  I just eat it with butter and black pepper.  I always make a big batch and then divide it inot portions and put it in the freezer.  That way I always have a quick side dish if I need it.  I did the same thing with Beebs Turnip Casserole.

WTG on your weight loss!!  155 pounds gone!  THAT'S AWESOME!!

I passed on the broccoli because my calorie/carb counter told me it was 11 carbs and 5 fiber for a net of 6 and I'm trying to stay at 4.  But if I can eat all the broccoli I want, then please, someone tell me. I love broccoli!

I think the cauliflower mash is good.  It does not have the same texture as potatoes, of course, but it was wonderful.  Lots of pepper and just a dash of salt with a little butter and some garlic.  We were all surprised it was so good!

Doug's book (pg. 106) says broccoli 2 net carbs per 1/2 cup.  You could have had a cup of broccoli if you wanted it to be 4.

I want to try Spaghetti Squash next.  Does anyone know where I find it.  I looked all over the supermarket the other day and I cannot find it.

It depends on the broccoli you buy. I found a frozen brand called Todays Harvest at the local grocery store that doesn't add sugar to it, only 2 carbs per cup! I am a broccoli fiend, eat it almost everyday with my dinner. Add some no carb cheese and little garlic and it's magic!


@ShihTzuMom1 I will give it a try this weekend. My son is so picky about texture I just don't know if I can get him to go for it. And you know me, cooking is not my forte!

This was fresh broccoli.  I steamed it.  Only added pepper. 

My son's school makes cauliflower mashed potatoes sometimes for lunch.  He likes mine better!

Since Spaghetti Squash is seasonal, it can be tougher to find during the winter months.

Some stores stock the squash grown in Mexico and Chile.
You just need to check other stores to find it.

Our Krogers (Fred Meyer) carries it. But I have not seen it since before last Thanksgiving.

Good for you and congrats on the 6 pounds! :)

I love cauliflower mashed. To me, it's just as good as eating regular mashed potatoes. My family doesn't think so, but that's okay because that means I have leftovers. I still think it tastes like cauliflower, but it's more of a 'mouth-feel' thing. At least, it's like that for me. Love them! I saw spaghetti squash at our store the other day and thought about getting some. I ended up with turnips, which I'm going to make into 'fries' tonight.

I still can't find chayote anywhere!  :'( Is that seasonal, too?

Some items are tough to find in some areas ANY time of year.
Here in the Pacific Northwest, jicama and chayote are both hard to find.

I love love love my mashed cauli! I add a couple heaping tablespoons of mayo and some shredded cheese. Readyforthis told me that she saw a cooking show recently where the chef added a squeeze of lime juice to take the bite of the cauli out. I haven't tried that yet but I love mine just the way they are.

Cauliflower has become an absolute staple in our house.  Even my non-FTS husband loves the cauli mash and the cauli mac and cheese.  I made cauliflower cheese soup tonight and it was sooooooooo good.

I have always cooked my fresh broccoli in the microwave with garlic (zap it with a tiny bit of water for about 2.00 depends on your microwave I guess), and then add some shredded old cheddar 0 carb of course and zap for another 1.30 or 2.00.  So good.

I also cook zucchini that way, in the microwave, with garlic and oregano and shredded cheese - I'm so glad that I can still eat those sides.....they're my favourite.
