Brenda's Meatloaf

Hey Umpa!

Meatloaf is one of my family's favorite comfort foods. I know there are meatloaf recipes on the forum, but none of them are quite like mine...can you help me convert this to fts friendly!?!

1 lb. ground beef
1 pkg. dry onion soup mix
1 egg
barbeque sauce (usually 1/2 cup...I really don't measure...just "eyeball" it)
bread crumbs (I add bread crumbs until the meat holds together and is easily transferred to the baking dish...no longer "sticky")

Form into loaf, put in pyrex and bake on 375 for 50 - 60 min.

Really looking forward to how this is converted!!!

The flavor you are getting from the dried soup mix can be replaced by using some fresh onions mixed with onion and garlic powder.
The barbeque sauce can be replaced by walden farms barbeque sauce(or other low sugar barbeque sauce or you can always make your own) or sugar free ketchup.
I find bread crumbs totally un neccesary.I used them for years and they only stretch the recipe.Ground up pork rinds are exactly the same consistency and thats what doug uses to replace bread crumbs.However if you don't use breadcrumbs,don't use a loaf pan, use a baking sheet.The one thing bread crumbs do is soak up the grease.If you use a baking sheet it will just roll off to the edges.I love meatloaf,especially for sandwiches.We will work on this together until you get exactly what you want.Try this and get back to me. ;)

The last time I made meatloaf I didn't have any pork rinds so I used flax meal and it worked well.

Yes I am so excited Mouseissue, thank you for noticing.  My husband was going to congratulate me this morning and I told him no, not until I actually reach my goal.

Not only is 50 pounds loss getting very close, but I'm also approaching the halfway point to my goal which is 57.8 pounds lost.

FTS is so amazing!... And so is everyone here at the forum!

I fixed the meatloaf tonight and it was an amazing hit!! I used the smashed pork rinds instead of bread crumbs! I used a cookie sheet with sides with the meatloaf in the center and it didn't get mushy!!
