I LOVE Parmesan dishes and I've gotten very creative with them over the years. They are simple to make and delicious. You can use many different protein or veggie sources for your main dish including;
Veal, Chicken, Pork, Turkey, Fish, Tofu, Eggplant, Zucchini, Green Tomatoes even Boca Burgers.
The art of Parmesan is a simple matter of flash pan frying a
thin piece of food coated or non coated in olive oil until it's crispy, light brown and cooked through. If you decide to coat it a simple ground pork rind flour after an egg wash of the food works well. While the food is frying turn on your broiler to medium/high heat. The next step is to place the cooked food onto a cookie sheet and top with a couple of tablespoons of your favorite low sugar pasta sauce (room temp or heated) and your favorite "melty gooey stringy" cheese. My two fav's are mozzarella or aged provalone. I have been guilty though of using hot and spicy cheeses when making Mexican Parmesan
Place the cookie sheet under the broiler and watch it closely, the intention here is only to melt the cheese.
Now put that ooey, gooey goodness on a plate and side it with Shiritaki, or, Macaphoney, or Cheesy Broccoli and Manga Manga!
