I've been making this recipe for years and my family has always loved it. I hadn't made it since starting FTS, but decided to last night. I tweaked it a little to cut down on the carbs, mostly with the bread crumbs.
SUN-DRIED TOMATO MEATLOAF
2 tsp garlic, minced
1/2 onion, chopped
1 egg white
1 lb lean ground beef
1/4 c dry bread crumbs
1/2 c sun-dried tomatoes, in oil
1/2 tsp oregano, ground
1/2 tsp thyme, ground
1/4 tsp salt
1/4 tsp pepper
Preheat oven to 350 degrees. In a skillet with some olive oil, saute garlic and onions until translucent. In a medium size bowl, mix together egg white, ground beef, bread crumbs, tomatoes, garlic, onions, and seasonings. Mix well. Press into a loaf pan greased with olive oil and cover lightly with foil. Cook for 60 minutes. Let sit for 10-15 minutes before slicing. Serves 6.
According to the recipe converter I'm using, it said each piece is about 6 net carbs. It doesn't let me list my specific brand of tomatoes, though, so I'm thinking it might be lower. I'm not sure. Normally, I add 3/4 cup of bread crumbs, but last night I cut them down to 1/4 cup. It tasted the same, but I could tell it was missing them. Is there anything you can use instead of breadcrumbs or in addition? Flax?
